You are most likely entering text in the File name field in the Inspector. File names can only have the characters a-z and 0-9. They cannot contain characters with accents. If you want to include characters with accents in them use the Navigation Display Name field right underneath.
The Navigation Display Name field can use any characters you want and is what users actually see in your navigation bar.
