Small business owner/EW user here. I have a website created and hosted by EW, and I would now like to add a blog page with "blog.website.com" as a subdomain. When I create the blog page of the website, it won't let me point just that page to the subdomain. So do I need an entire different project file just for the blog page of the site to use the subdomain?

Yes, you should publish the blog page to the subdomain as a separate "website."
